7-Eleven’s Lab Store

Featuring a Taqueria and Craft Beer Station

7-Eleven unveiled a “Lab Store” in Dallas, Texas this month that features a Taqueria, craft beer refilling station, indoor and outdoor seating, and streamlined their checkout process by allowing customers to pay on their iPhone.  7-Eleven officials claim that this store is “experimental testing ground” but we all hope for success and more “Lab Stores” to open up country-wide.

This 7-Eleven features a coffee and smoothie bar, yogurt and ice cream bar, a station called “The Cellar” that features wine and craft beer, and a Laredo Taco Company counter featuring homemade tortillas and Tex-Mex food. Chris Tanco, 7-Eleven’s vice president and chief operating officer states, “7-Eleven stays at the forefront by pushing the boundaries and being unafraid to try new things. This new lab store will serve as a place to test, learn and iterate new platforms and products to see what really resonates with customers and how we can use those learnings to influence future store designs.”

The good news is that 7-Eleven plans a nationwide launch of its “Lab Store” though there is no news on how many locations will open.  Let’s hope we get some on the east coast!
